Today I made an avocado kiwi salad with a lime dill vinaigrette for a friend's baby shower. While I'm not normally a fan of mixing savory and sweet in my salads, I think this turned out pretty well. The varying shades of green and the seed pattern of the kiwi makes the dish visually pleasing. Both the avocado and kiwi are considered superfoods. Avocados contain lots of vitamin K which aids in blood clotting and kiwis have more vitamin C than even an orange.

Avocado Kiwi Salad
Ingredients:
2- slightly ripe avocados, cubed
4- kiwis, peeled and sliced
2- celery stalks, julienned
1/2 cucumber, julienned
1 package broccoli microgreens
Lime Dill Vinaigrette
Ingredients:
1/4 cup fresh lime juice
2 Tbsp fresh dill
1 Tbsp dijon mustard
2 Tbsp vinegar
6 Tbsp olive oil
2 tsp sugar
1/2 Tbsp salt
pepper to taste
Directions:
- mix together the kiwi and avocado with half the vinaigrette
- mix together the cucumber and celery with the other half of the vinaigrette
- place the vegetables and fruit on a plate, top with broccoli microgreens (or sprouts of your choosing)
- top with fresh cracked peppercorn
