Shitake Mushroom and Watercress Salad

shitake mushroom and watercress salad

A nice and simple side dish or light fare for a warm summer day. Watercress may seem like an unconventional choice but its similar to arugula in both flavor and nutrition. The bitterness of the watercress milds when cooked but is a nice contrast to the flavor of the mushrooms and other ingredients. This dish can be served warm or cold.

Ingredients:

1 large bunch watercress, chopped
1 lb shitake mushrooms
2-3 cloves garlic, minced
1 inch cube garlic
1 Tbsp olive
1 Tbsp soy sauce
1-2 tsp gramasio or toasted sesame seeds

Directions:
  • lightly saute mushrooms in olive oil and soy sauce until tender (4-5 min)
  • add in garlic and ginger and saute on low heat (1 min)
  • add in watercress and saute for 1-2 min
  • top with gramasio or toasted sesame seeds 

Potential Alternatives:
  • try other greens (arugula, spinach, kale, chard)
  • add more or reduce amount of ginger and garlic
  • use other mushrooms
