Crepe Square w/ Egg and Basil Pork Medallion



One of the most important rules about eating more vegetables is to on occasion break the rules and not eat many or any vegetables (well at least for you omnivore types).  While vegetables have most everything you need to live a healthy and happy life, the occasional indulgence of dairy and meat can break things up and add some new flavors to your taste pallet.  This breakfast dish was inspired by this recipe, which I followed almost exactly.  Check it out.  Here I provide the simple but tasty recipe for the pork medallions.  Next time I will either lightly glaze the bottom of the crepe with a light goat cheese sauce or top with creme fraiche.

Makes: 10 medallions
Prep Time: 20 min
Cook Time: 15 min

Ingredients:

groovy ground pork
1/4 cup finely chopped basil
1/4 cup Italian-style breadcrumbs
1 egg
salt and pepper to taste

Directions:

  • combine all ingredients and mix together well with fork
  • form small 2 inch diameter medallions with your hands
  • cook in skillet for 10-15 minutes, flipping half way between when well browned
