Leek Patties w/ Yogurt Dill Sauce



leek patties w/ yogurt dill sauce

A nice, fairly quick meal to make.  The yogurt dill sauce goes very well with the leek patties.  The green color of the leeks makes this fried patty look much better than most other types.  

Makes 12-14 patties
Prep Time: 30 min
Cook Time: 30 min

Ingredients:

Patties

4 leeks, sliced thin
1 onion, sliced thick
4 slices of bread, cubed
1 cup milk
1/2 cup flour
1 egg
salt and pepper to taste

Yogurt dill sauce

4 oz yogurt
1 bunch dill, blended in food processor
1 Tbsp olive oil
1 tsp salt
1 tsp sugar

Directions:
  • combine all yogurt dill sauce ingredients, mix well, add water for desired thickness, and set aside
  • bring a pan of salted water to boil
  • soak leeks and onions in boiled salt water until tender
  • soak bread cubes in milk
  • once the bread is fully soaked drain and squeeze excess milk 
  • drain leeks
  • combine leeks, onions, bread, and egg
  • add salt and pepper to taste
  • stir mixture until evenly spread
  • form patties with hands coat both sides with flour
  • fry in olive oil until brown on both sides
  • place on paper towel to drain excess oil
  • serve hot with yogurt dill sauce
