A relatively quick and easy to make original soup that I made last week with some dried fava beans we had in the house that I wanted to use. I was actually trying to cook the beans whole and accidentally had added too much water when boiling, but the resulting paste looked like the perfect base to make a soup with instead. Turned out really tasty and its perfect for a cold wet winter day like today was.
Serves: 4-5
Prep Time: 0.5 hr (24 hrs to soak beans)
Cook Time: 2 hr
Ingredients:
1 1/2 cups dried fava beans
2 carrots sliced
1 avocado, cubed
2 cups veggie broth
1 onion, thinly sliced
salt and pepper to taste
Directions:
- soak dried fava beans overnight in a bowl of water
- lightly saute onions in a bit of olive oil
- drain beans and place in large cooking pot with about 3 cups water
- bring to a boil and simmer for 1.5 hrs (add additional water if needed)
- once the beans have become a puree add in veggie broth
- bring to a boil again and simmer for 10-20 min
- add in vegetables and black pepper to taste
- cook further until desired thickness is reached
- add salt and pepper as needed
Alternatives:
- add celery or other vegetables
- try with parsley
- use your favorite spices (e.g. cumin, chili pepper, oregano) to add some different flavors
