This will be the last of the superfoods month posts. In total, I posted 15 recipes with 31 superfoods over the last 30 days. In all, I really enjoyed working on this but it was a bit time intensive. I hope to continue monthly themes, but I probably won't have as many posts per month as this past month. This post features four superfoods in the recipe including, greek yogurt, papaya, oranges, and wheat grass (though I did include a left over kiwi too). For those of you that have never tried Greek yogurt, it is more of a thicker and savory yogurt. I was never a fan of yogurt until I had this kind, the others are much too sweat and tangy for my liking. Greek yogurt is good for you because it contains good levels of iodine, calcium and potassium. Papaya and oranges are both high in vitamin C, and believe it or not, papaya has double the amount of vitamin C compared to oranges. Wheat grass is a superfood I added after the fact because folks had recommended it and I've only really had it once. Some of wheat grass's purported health benefits include anti inflammatory aid, detoxifier, and improved digestion. In this recipe, I've included in grass form but it usually juiced and added to smoothies.
Serves: 2-3
Prep Time: 15-20 min
Ingredients:
16oz 2% fat Greek yogurt
1 bunch of wheatgrass (see photo below), finely chopped (save some for garnish)
2-3 sprigs of mint (save some for garnish)
1/2 papaya, cubed (save some for garnish)
1 kiwi, sliced
1 orange, peeled and put into slices
1/2 banana, sliced
1 Tbsp brown sugar (if desired)
Directions:
- in a medium bowl, mix together mint, wheat grass, papaya, mint, and brown sugar
- serve individually topping with remainder of fruit
- garnish with wheat grass and mint.
- try other favorite fruits (e.g. blueberries, strawberries, mango, etc.)
- make as a parfiet
- try it as a smoothie
