Chipotle and Chive Deviled Eggs


Survived my first week as a professor and we are slowly getting moved into the new digs.  The light from the kitchen window is going to be great for taking food photos.  Hopefully, I'll actually have some time this semester to cook and photograph.  Here is a slightly new spin on a classic recipe we brought to a party yesterday.  Overdid it on the salt for this (thus no added salt in the recipe below) but the flavor was solid.  

Ingredients:

12 eggs
1/4 cup mayonaise
1-2 tsp chipotle
2-3 Tbsp finely chopped chives (plus more for garnish)
2-3 Tbsp mustard
1/4 cup finely chopped onions
black pepper to taste

Directions:
  • hard boil the eggs, cool, and remove shells
  • slice eggs in half lengthwise, remove yolks
  • mix yolks together with other ingredients (I used a hand mixer to get it smoother)
  • dollop mixture onto egg halves
  • lightly sprinkle some chipotle and chives on eggs
Alternatives:
  • try it with fresh dill instead
  • use silk tofu in place of mayo
