Spicy Roasted Chickpeas



Makes: 2 cups
Prep Time: 1/2 day
Cook Time: ~1.5 hr

Ingredients:

2 cups cooked chickpeas
2 Tbsp olive oil
2 tsp chili powder
2 tsp salt (or to taste)
1 Tbsp cumin

Directions:

  • soak dried chickpeas for 12 hrs (or use canned chickpeas)
  • cook chickpeas in boiling water for about 1 hr (unless canned)
  • blend chickpeas with oil and spices
  • place flat on baking sheet
  • cook in oven at about 250ºF for 30 min or until lightly browned
  • to speed up the process about halfway through gently roll the chickpeas around on the baking sheet
  • enjoy as a nice healthy snack
