a simple and fresh yet slightly decadent appetizer
Makes: 10-12 figs
Time: 20 min
Ingredients
10-12 figs
1/4 cup goat cheese
1/4 cup pea shoots
1 Tbsp honey
1 Tbsp olive oil
1 Tbsp balsamic vinegar
salt and pepper to taste
Directions
- slice each fig down the top in quarters without cutting completely through
- place in toaster oven at 500 ºF for about 15-20 minutes or until lightly browned
- mix together honey, vinegar, oil, salt, and pepper
- top each fig with a dollop of goat cheese, pea shoots, and dressing
Alternatives
- use micro-greens or sprouts instead of pea shoots
- top with other dressing such as sweet chili or roasted red pepper
