Roasted figs w/ goat cheese and tender pea shoots topped with a honey balsamic dressing

a simple and fresh yet slightly decadent appetizer

Makes: 10-12 figs
Time: 20 min

Ingredients

10-12 figs
1/4 cup goat cheese
1/4 cup pea shoots
1 Tbsp honey
1 Tbsp olive oil
1 Tbsp balsamic vinegar
salt and pepper to taste

Directions

  • slice each fig down the top in quarters without cutting completely through
  • place in toaster oven at 500 ºF for about 15-20 minutes or until lightly browned
  • mix together honey, vinegar, oil, salt, and pepper
  • top each fig with a dollop of goat cheese, pea shoots, and dressing
Alternatives 
  • use micro-greens or sprouts instead of pea shoots
  • top with other dressing such as sweet chili or roasted red pepper
