King Salmon Tostada


Last week I had a most excellent opportunity to go out on the ocean with a friend to go whale watching and salmon fishing in his zodiac.  In addition to getting to see humpback whales, Risso's dolphin, Northern right whale dolphins, I reeled in two nice king salmon.  While most of the salmon will be best enjoyed over a grill, I thought some of the rougher cuts I made would be better served as salmon tacos or tostadas.


Makes: 10 tostadas
Time: 45 min

Ingredients

10 tostatas
1 lb salmon
1 lime squeezed
1 Tbsp soy sauce
3 cups shredded cabbage
1 avocado sliced
1 cup cilantro

cilantro-yogurt sauce

2-3 Tbsp olive oil
2 garlic cloves chopped
1 shallot chopped
1 cup cilantro chopped
1/2 cup yogurt
2-3 tsp salt
chili pepper (to taste)

Directions

  • bake/broil salmon topped with soy sauce
  • combine all sauce ingredients and blend in food processor
  • place cabbage, salmon, avocado on top of the tostata
  • top with sauce and extra cilantro
