grilled portobello caprese |

Ingredients:
6 portobello mushrooms, stems removed
5 oz fresh mozzarella, 1/2" slices
1 basket large heirloom cherry tomatoes, 1/4" slices
8-10 large basil leaves, thinly sliced
capers (optional)
Directions:
- layer cheese, tomatoes, and basil atop the portobello mushrooms
- grill or bake until cheese is melted and the mushroom is tender and soft
- water may collect in the mushroom cap as its cooking, carefully drain
- top with balsamic vinegar reduction for added flavor
Potential Alternatives:
- try filling with roasted red peppers and goat cheese
- stuff the mushrooms with hummus and top with pita chips
