Grilled Portobello Caprese

grilled portobello caprese
Makes: 6
Prep Time: 20 min
Cook Time: 15 min

Ingredients:

6 portobello mushrooms, stems removed
5 oz fresh mozzarella, 1/2" slices
1 basket large heirloom cherry tomatoes, 1/4" slices
8-10 large basil leaves, thinly sliced
capers (optional)

Directions:
  • layer cheese, tomatoes, and basil atop the portobello mushrooms
  • grill or bake until cheese is melted and the mushroom is tender and soft
  • water may collect in the mushroom cap as its cooking, carefully drain
  • top with balsamic vinegar reduction for added flavor  
Potential Alternatives:
  • try filling with roasted red peppers and goat cheese
  • stuff the mushrooms with hummus and top with pita chips
