lemon encrusted prosciutto-wrapped halibut |

Cook Time 15-20 min
Ingredients:
4 small halibut fillets, skin removed
8 slices prosciutto
3-4 lemons, squeezed
1 Tbsp oil oil
1 Tbsp black pepper
1/4 cup bread crumbs
Directions:
- soak prosciutto in lemon juice
- lightly pan sear halibut
- wrap two pieces of prosciutto around halibut
- combine black pepper and bread crumbs
- lightly top wrapped halibut with bread crumb/pepper mixture
- add remaining lemon juice in glass baking dish with olive oil
- place halibut into the baking dish
- bake at 350 for 10-15 min or until lightly browned on top
