Lemon Encrusted Prosciutto-Wrapped Halibut

lemon encrusted prosciutto-wrapped halibut 

Serves: 4
Prep Time: 10 min
Cook Time 15-20 min

Ingredients:

4 small halibut fillets, skin removed
8 slices prosciutto
3-4 lemons, squeezed
1 Tbsp oil oil
1 Tbsp black pepper
1/4 cup bread crumbs

Directions:
  • soak prosciutto in lemon juice
  • lightly pan sear halibut 
  • wrap two pieces of prosciutto around halibut
  • combine black pepper and bread crumbs
  • lightly top wrapped halibut with bread crumb/pepper mixture
  • add remaining lemon juice in glass baking dish with olive oil
  • place halibut into the baking dish
  • bake at 350 for 10-15 min or until lightly browned on top
